Rearranging the office and the coaxial cable won't reach to where we want to put the router and switch. If I keep the modem where it is and use a longer cat5e cable in the drop down ceiling will it reduce the speed? We would be going from a 3 foot cable to probably 25 feet.

Unlikely, just make sure it's one continuous cable.

If you are running it through the air space in the ceiling it needs to be plenum rated to meet code.
